Rooty Soup


Winter is here and I wanted to release this blog as an encore. I received great feedback from this recipe and wanted to share it again as it is sooo good!

Baby, it’s cold outside! So when you’re hunkered down for the weekend or a snow day, this is the perfect soup to make! Bonus, it's low in net carbs with only 3 potatoes in the entire recipe! It can also easily be made vegetarian by leaving off the bacon on top. Makes 6 servings.


You’ll need:

1 lg sweet onion

3 med leeks

6 med garlic cloves

2 med shallots

1 med head of cauliflower

3 med potatoes

3 med parsnips

1/2 cup heavy cream

6 cups low sodium chicken broth

3-4 slices bacon

1/3 cup feta cheese

2T olive oil

3t Salt

1t white pepper

1t chili flakes

Garnish

2T diced scallion

2T bacon

2T chopped red pepper

2T feta cheese

1 heaping helping of love!


Coarsely chop all veggies. Add oil to pan and sauté onion, leeks, garlic and shallots about 10 minutes until soft.


Add heavy cream, broth, veggies and seasonings. Transfer mixture to pot and bring to a boil. Reduce heat, cover and simmer for approximately 20 minutes until vegetables are tender.


While simmering your veggies, cook up your bacon and chop.

Puree the mixture until creamy with even consistency. I like to leave a few chunks.


Serve and garnish with chopped green onions, bacon, feta and chopped red pepper.

Last, but not least, here’s the most important part of the recipe: Turn off your television and tuck away the cell phone. Now dig through your closet to find a board game, cards, art supplies or a puzzle. Invite family, friends, or a sweetie to enjoy. If it's just yourself, how about writing a hand-written letter or card for someone... just because? Have a fun, relaxing and memorable time, cozy and warm by the fire with your new favorite soup!


Helpful Hint- Did you know that your green onion roots will regenerate themselves?! Just put enough water in a small glass to cover the roots. Give them a little time and watch them sprout! I had cut this down to the white near the bottom. Voila, you’ve just doubled your investment. If only the stock market were that easy!
