Coarsely chop all veggies. Add oil to pan and sauté onion, leeks, garlic and shallots about 10 minutes until soft.

Add heavy cream, broth, veggies and seasonings. Transfer mixture to pot and bring to a boil. Reduce heat, cover and simmer for approximately 20 minutes until vegetables are tender.

While simmering your veggies, cook up your bacon and chop.
Puree the mixture until creamy with even consistency. I like to leave a few chunks.

Serve and garnish with chopped green onions, bacon, feta and chopped red pepper.
Last, but not least, here’s the most important part of the recipe: Turn off your television and tuck away the cell phone. Now dig through your closet to find a board game, cards, art supplies or a puzzle. Invite family, friends, a sweetie to enjoy. Or if it's just yourself, how about writing a hand-written letter or card for someone... just because? Have a fun, relaxing and memorable time, cozy and warm by the fire with your new favorite soup!

Helpful Hint- Did you know that your green onion roots will regenerate themselves?! Just put enough water in a small glass to cover the roots. Give them a little time and watch them sprout! I had cut this down to the white near the bottom. Voila, you’ve just doubled your investment. If only the stock market were that easy!
